Apple Cinnamon Quinoa Oatmeal

How do you like your oatmeal? 

 

   How about healthy AF with an extra serving of protein? If that sounds up your alley, this Quinoa Oatmeal Recipe is for you! Heads up, this makes a TON of delicious oatmeal that can be refrigerated and eaten through out the week! If you're looking for a smaller portion, just cut the recipe in half! 

 

What you need : 

 

1 cup steel cut oats

1/2 cup quinoa

2 tsp coconut or olive oil

4 cups water

1/2 cup milk

1 medium sized apple

1 tsp cinnamon

 

What to do:

 

Begin to bring the water to a boil in a large pot

While you wait for the water, rinse the quinoa until the water runs clear. 

Brown the oats (I like to add the quinoa too!) in the 1 tsp of oil for 1-2 minutes. Just until they are brown and smell delicious. 

Now that the water is boiling, add the quinoa and oats, and bring to a rolling boil.

Reduce heat and cover, simmering for 20 minutes. 

While the oatmeal is simmering, cut up the apple, and saute it in 1 tsp oil and 1 tsp cinnamon. Once the apples are soft, remove from heat. 

Now you are ready to remove your oatmeal from heat and add your milk. 

 

Top with the cinnamon apples, and mix in anything else you'd like! (For me, this means shaved almonds and more cinnamon!)

 

 

*Sidenote - this oatmeal can be made any which way! Ditch the apples and top your oats with fresh fruit, brown sugar, maple syrup, honey, or whatever else sounds delicious. The possibilites are truly endless, and you'll feel so GOOD after eating it!
