Protein Packed Yogurt Pancakes

Breakfast, as we all know - is super important. It fuels us up for the rest of our day, and helps to restore the body with nutrients after eight hours of sleep. (At least, hopefully we're able to catch that many z's!)
Usually, I don't prefer anything sweet in the morning, tending to stick to more savory options like cheesy eggs or omelets and toast. When I DO crave something on the sweeter side, these greek yogurt based pancakes are my go to. Super easy. Super yummy. Quite healthy.
You will need :
6 oz of your favorite greek yogurt (I use natural fage, unflavored)
1 large egg (preferably farm raised)
1/2 cup whole wheat flour
1 tsp baking soda
Sliced fruit is optional. I like to toss some blueberries in the mix and enjoy the antioxidant boost.
What to do :
Start with your yogurt, and whisk it up until creamy. (This morning, I added a bit of vanilla protein powder to my yogurt just to kick up the protein intake a bit.)
Crack and add your egg, whisking together until blended.
In a seperate bowl, mix your flour and baking soda together.
Pour the dry mixture slowly into the yogurt mixture and stir well.
*Note - the batter will be much fluffier and quite thick than you may be used to.
Grease your pan over medium heat (I prefer coconut oil for this)
Spoon your batter out, and flip when the batter begins to bubble. Cook until browned on each side.
Top with fresh fruit, maple syrup, almond butter, honey, or whatever else you typically enjoy with your hot cakes!
