Semi-Healthy Zucchini Cookies

Hey ya'll! Welcome to the Polistic Blog! It shall be an awesome smorgasboard of recipes, nutrition tips, stretches, at-home-friendly workouts, events, pictures, discussion, and inspiration. I've been wanting to do something like this for awhile now, and I'm happy to finally embark on the blogging journey for our small little community we have created.

And, who doesn't love to eat? For that reason - the first blog shall be about the amazing zucchini cookies I made the other night. I wanted to take pictures of the process, or at least the final product but they were so good we ate them ALL. Like, in a night. Whoops.

Now, I won't pretend that the recipes I share with ya'll are going to be absolutely guilt-free, healthy AF recipes one hundred percent of the time. I do try to be conscious of what I put into my body, and the kind of fuel my body needs. But guys, we're POLE DANCERS. We burn so many calories in class that we can pretty much afford a little guilt in our diets.

So get ready to indulge in these semi-healthy zucchini cookies!


  • 1½ cups all natural, whole wheat flour (any baking flour will do)

  • 1 cup organic pure cane sugar (or just good ol' fashioned granulated sugar)

  • ½ teaspoon Baking Soda

  • ½ teaspoon salt

  • ¼ teaspoon nutmeg

  • ¾ teaspoon cinnamon

  • ¾ cup shortening (if shortening screams unhealthy to you, replace it with 3/8cup of applesauce - you can do this by uing your 3/4 cup measurer and fill it halfway)

  • 1 egg (this can also be replaced with applesauce for you vegans - use 1/4 cup)

  • 1 cup grated zucchini (I used my food procesor for this and it was awesome)

  • 1¾ cups quick oat (I also threw my oats into my food processor to chip them up nice and fine)


  • Preheat oven to 400 degrees F.

  • Combine flour, sugar, baking soda, salt, nutmeg and cinnamon together in a large bowl and stir to combine ingredients well. Cut in shortening. Beat in egg until well combined. Add zucchini and oats and beat until evenly mixed in.

  • Spoon drops of cookie dough onto greased cookie sheet.

  • Bake at 400 degrees F for 8-10 minutes. Let cool.

I'm not gonna lie, the cookies are damn good as is, and probably healthiest that way. However, I'm a pole dancer, damnit - and I deserve to splurge sometimes! That being said, my boyfriend and I lathered these bad boys up with goold ol' fashioned cream cheese frosting and they were TO DIE FOR. No joke.

Lovers, this has me thinking - should we do a Polistic Baking Day? Omg, imagine all the goodies!
